Piecesitas de Mazapan



  • 500G Sifted Icing Sugar
  • 500G Ground Almond
  • 200G Boiled and Mashed Sweet Potato
  • 1 Egg Yolk

For Decoration

  • Pine Nuts
  • Glace Cherries
  • Flaked Almonds



1, Boil and mash your sweet potato and leave to drain overnight if possible.

2, Mix the icing sugar, and mashed potato together until you have a smooth textured mixture, add the potato in bits as you may not need all the potato.  Finally add the ground almonds and mix together into a dough.

3, Mould bits of the dough into circles and coat in egg yolk, then cover in one of your decoration ingredients. Placing all of these on a baking tray and transferring into the oven for 10 minutes at 180 degrees so harden and golden.
