Mama’s Empire Cake



  • 450 g Self Raising Flour
  • 225 g Sugar
  • 225 g Margarine
  • Pinch of Salt
  • Pinch of Mixed Spice
  • 112 g Sultanas
  • 112 g Currants
  • 56 g Glazed Cherries
  • 2 Eggs
  • 150 ml Milk


1. Preheat oven to 180°C

Using the rubbing method do the following:

1. Mix flour and butter until they form a breadcrumb texture.

2. Add all the dry ingredients.

3. Beat eggs with the milk and add to the mixture.

2.    Once ready pour into a greased baking tin and pop it in the oven for 45 minutes – 1 hour, checking occasionally to avoid it burning.
