Stuffed skirt – Cima Rellena

Ingredients

  • 1Kilo Flank Steak
  • 3 eggs
  • Parsley
  • Garlic
  • Grated Cheese
  • Breadcrumbs
  • Celery
  • Carrots
  • Potatoes
  • Angel hair pasta

Method

Mix 3 eggs, Parsley, chopped garlic and parsley, grated cheese and breadcrumbs together and stuff it all into the opening of the beef skirt, leave some space for  the stuffing to grow when it’s cooking.

Close the opening by sewing it. Get a pressure cooker or a normal pot pour in some cold water with some celery and carrots. Add salt to taste bring to the boil, then cover and cook for 30 0r 40 mins.

Check if the meat is tender, if not cook for a few more mins until tender then add some potatoes and Small Angel Hair Pasta.

You can also cook it  in the  oven without the soup by wrapping it up in foil paper for about 2 hours.
