Squid Stew (Calamares Guisado)

Ingredients

  • 1 large onion
  • 6 cloves of garlic
  • 1 fresh tomato
  • 1 small red pepper
  • 1 small green pepper
  • 1 sachet of azafran (saffron)
  • Half Pkt Solis tomate Frito
  • Half fish cube
  • Handful peas
  • 6 potatoes
  • 1kg squid
  • Olive oil

Method

1. Fry the onion, garlic, fresh tomato, peppers and add a splash of oil until slightly soft. Then blend all together and add the azafran (saffron), tomate frito (chopped tomatoes) and fish cube.

2. Dice the squid and place inside a pressure cooker along with the sauce in step 1. Add some water (make sure you add enough so that the squid is covered completely by the liquid). Once it starts to boil cover the pressure cooker and cook for about 15 mins on low heat approx 3 ½ (the squid should be tender by then)

3. Once that is done and the pressure has been released, take the squid out with a ladle and add the potatoes and peas to the mixture, stirring occasionally (if you feel you need to add some more water do so, so that the mixture does not burn) until tender.

4. Then add the squid back in again and season to taste and enjoy.
