Rosemarie’s Thick and creamy vegetable soup

Ingredients

  • 1 Small Piece Cabbage Chopped
  • 1 Small Broccoli
  • Chopped
  • 1 Or 2 Leeks,
  • Turnip,
  • Pumpkin,
  • Spring Onion,
  • A Handful Of Spinach Leaves,
  • Carrots,
  • 1 Large Chopped Potato
  • 1 Greek Yogurt
  • 1 Cheese Portion
  • 1 Teaspoon Curry
  • Salt And Pepper.

1. Boil all the vegetables until tender and blend into a puree,

2. Boil your egg separately whilst your vegetables cook.

3. Stir in the yogurt, spices and cheese and cook for a further 5 mins.

4. Serve with half a boiled egg per plate.
