Rice and Milk Pudding



  • 125g. shortgrain rice,
  • 100 gr. sugar,
  • almost 1 tin Evaporated Milk,
  • 500ml water,
  • lemon rind
  • 1 cinnamon stick


1, Gently bring water, rice, sugar, lemon rind and cinnamon stick to boil in a pan and simmer gently until rice is almost cooked, adding more water if necessary.

2, When almost cooked add close to a tin of Evaporated Milk and mix gently until rice is tender. Mixture should be creamy.

3, When cool, pour into a bowl and sprinkle with ground cinnamon. Lovely hot or cold, straight from the fridge.
