PASTEL DE ZANAHORIAS (CARROT DELIGHT)

Ingredients

  • 1 kilo of carrots
  • 1 tot of anis
  • Orange peel
  • ½ kilo brown sugar
  • ½ kilo desiccated coconut
  • Morning coffee biscuits (or similar square ones)
  • Cinnamon

Method

1, Peel and boil the carrots with orange peel. When these are cooked, strain and mash whilst warm

2, (remove peel). Add sugar and coconut (leaving a bit for decoration). Add a bit of cinnamon.

3, In a squared dish place a layer of biscuits. Then layer the carrots mixture and alternate with biscuits.

4, End with carrots mixture at the top. Add juice of orange and decorate with remaining coconut and

5, sprinkle with cinnamon.

This dessert can be served with custard or cream.
