Mussels in Tarragon Sauce

Mussels in Tarragon


  • 1 kilo mussels
  • 1 chopped onion
  • 1 chopped garlic clove
  • 2 or 3 chilies
  • 1/2 teaspoon Tarragon
  • 100 ml white wine
  • 1 tablespoonful olive oil
  • 10 grs flour
  • Saffron
  • Salt
  • Pepper.


1, Cook the mussels in the wine and Tarragon. Sieve the liquid and put aside.
Heat oil and fry onions, chilies and garlic.

2, Stir in the flour and the saffron. Arrange the mussels on one side of the shell only and pour the sauce over them.
