Mexican Cabbage and Meat Pie



  • 3 cups raw cabbage
  • 1/2 large chopped onion
  • 2 tablespoons Mexican spices
  • salt and pepper
  • 400g lean minced beef
  • 1 cup uncooked rice ( I used brown rice)
  • 1 tin cream of tomato soup
  • 1 soup tin measure of luke warm water
  • 1 cup grated soft edam cheese


Preheat oven to 180C

1) Boil rice

2) Boil cabbage, onion and Mexican spices and drain

3) lightly brown the above

4) Brown minced meat add rice, tomato soup, water, salt and pepper, cook for a while

5) In an oven dish spread 1/3 of the cabbage, top with 1/2 the mince meat mixture, cover with the remaining cabbage.

6) Sprinkle with grated cheese on top, cover and cook for 1 hour.
