• 225 g Self Raising Flour
  • 110 g Butter
  • 85 g Caster Sugar
  • 28 g Desiccated Coconut
  • 56 g Glazed Cherries
  • 1 Egg
  • 3 tbsp Milk
  • Jam

1. Mix the flour with butter, and rub together until it resembles breadcrumbs, now add sugar, coconut and cherries, then beat the egg with the milk and add to the mixture.

2. Place on an oven tray in small heaps and make a thumb size hole in the centre to place jam.

3. Bake in the oven at 200°C and cook for 20 – 25 mins. When ready leave to cool and pour a spoonful of Jam in the hole.
