Ingredients
- 1 small cauliflower,
- 1 onion,
- 1 small courgette,
- 1 potato,
- 2 cloves garlic,
- vegetable or chicken stock,
- butter
- olive oil,
- milk.
Method
1. Cut all the vegetables in small chunks, sauté in butter and olive oil stirring and tossing until all the veggies are slightly straw-coloured (about 15 minutes altogether and you may have to add extra butter if it becomes too dry)
2. Add stock until veggies are completely covered, bring to the boil and simmer for about half an hour or until vegetables are soft. You may have to add extra stock as it is reduced whilst cooking.
3. Add a glass of full cream milk and blend until smooth. Taste for salt and add ground pepper. A really delicious soup!
