Coconut Milk, Strawberry, Banana, Cucumber, Spinach and Kale Smoothie

We’re a few weeks into the year and after all the excited “new year, new me” resolutions, it’s probably around the time of January when those ambitious goals are dwindling, particularly those diet and fitness goals.

However, we don’t want you to give up, we want you to persevere and make healthy eating an effortless part of life. We love food as much as the next person and when it comes to food we may take a hedonistic approach but deep down we feel you should have a balance of good and bad in life.

So what’s so great about this smoothie? Well here’s some points about the ingredients you should know.

Coconut Milk – Rich in fibre and vitamins
Strawberries – Immune boosting vitamin C
Kale – A powerful antioxidant and high in protein
Spinach – Anti-inflammatory and full of iron and nutrients
Cucumber – tastes wonderful and great for both your skin and hair
Banana – A terrific source of potassium

Ingredients

  • 4 – 5 Fresh Strawberries
  • Baby Spinach
  • Kale
  • 1 Banana
  • 1/2 Cucumber
  • 200 ml Coconut Milk

Method

1, Rinse all your fruit and vegetables and chop all your ingredients into smaller pieces, leave one strawberry to the side.

2, Place everything in a blender and blend until smooth.

3, Pour into a jar and enjoy.
