- Three tbsp of olive oil.
- Two medium sized green peppers.
- one onion.
- one chicken cube.
- Four chicken thighs.
- One small pkt of tomato frito triturado.
- one medium glass of white wine .
- Two medium poatoes.
1, In a frying pan add the olive oil, slice the onions and green peppers & fry until cooked through.
2, Put onto kitchen paper to drain oil out, in that same oil, add the chicken thighs and fry a bit to seal the chicken a bit. Once golden, add water to cover, add chicken cube and cook until chicken is cooked by which time there will be very or no water left.
3, Add peppers, onion and tomato. Cook for a further three or four mins more and at the last moment add the white wine and stir around, for the wine to evaporate.
Serve with fried jacket potatoes.
